Ancho Pork Belly

Instructions

Preheat the oven to 425 degrees

Combine all the spices into a dry rub and set aside.

Place the pork belly on a non-porous surface and use a paper towel to blot up any excess moisture.

Sprinkle all sides of the pork belly with salt and let sit for 10 minutes.

Sprinkle the pork with all of the spice mixture and rub it in.

Ingredients

  • 1.5 lbs pork belly
  • 1.5 tsp ancho chili powder
  • .5 tsp cumin powder
  • .5 tsp onion powder
  • .25 tsp garlic powder
  • .5 tsp smoked paprika
  • .5 tsp dried oregano
  • .5 tsp black pepper

Place the pork into an oven proof container fat side up and bake uncovered for 30 minutes.  Reduce the oven to 230 degrees and cook uncovered for another 90 minutes.  The top of the pork should be crisp and the meat tender.  The spices should have darkened and begun to almost blacken.

Remove from the oven and allow to cool slightly this will allow you to slice the meat without it falling apart.
